Dr Choi worked with members of the dietetic teaching team, the international students and international alumni and to create innovative approaches to better support learning for international students, both onshore and offshore, allowing them to  progress on time during the challenges presented during the Covid pandemic. The team created a novel Undergraduate Certificate in Mental Health, a collaborative and innovative program developed across several departments and schools. This new course addressed a need to educate a diverse non-specialist workforce. Its impact on the community will hopefully also translate to lives saved and improved through informed and better care, and less stigma for those experiencing mental illnesses and distress.
